Usually the knees have two shoots running parallel to the ground around the actual knee. If you use a sawzall with a 6-9” wood cutting blade you can usually cut around all sides of the knee and pull the whole knee out of the ground. You may have to cut at a 45 degree angle to “eat out” below the actual knee. Soft ground around the knee is usually the bigger issue, so you may need to add sand to build it up and give the mower wheels some more solid ground when it’s wet.

I use something similar to this every spring to cut them below the grass line. Works great.
