Cut out the blood line.

Remove skin.

Grill outdoors on high heat, hot and fast, with butter and Prudomme's redfish seasoning. The only non-simple thing about it- you can't walk away. You must tend to it and devote your full attention for what's usually a maximum of 6 minutes, depending on the thickness of the filets and heat of your flame.
