I spent 30 mins last night wrapping shrimp in bacon

And putting tooth picks in them all. Put them in a bowl and poured Japanese bbq sauce on them to marinate. Been looking forward to them all day. When I get home I make coleslaw and put it in the fridge. Make stuffed jalapeños and throw them on the pellet grill (recteq) at 250 for about an hour and a half.
Then I throw some sausage on. Once cooked I sliced it, put it in a pan, drizzled bbq sauce on and put it back on to caramelize. Pull it and throw some sliced dill pickles and cubed cheddar in the pan. Use a toothpick to get a piece of sausage, pickle, and cheese cube. If you haven’t done it yet please do. It’s amazing.
Crank the grill to 400 and put the shrimp on. About 10 minutes later I see smoke bellowing out of the grill, open it up and it’s completely on fire… do my best to kill the fire and pull the shrimp. As I’m pulling the shrimp, I know that they’re ruined. Burnt, toast, trash.
I was so mad… all that time, money, and excitement ruined. Took all of the wind out of my sail.
This isn’t a knock to recteq. I should’ve cleaned the grill out prior. But man talk about a huge letdown… all that time and effort down the drain…. There’s always next Friday I guess

You shouldn’t be using any pellet grill to actually “grill” honestly

I don’t know anything about those fancy grills, but if I’m doing bacon wrapped shrimp, which isn’t going to take long I’m not closing the lid and walking away. With enough heat going that’s something that you stand there and baby.

It could be worse. I spent 30 hours last weekend wrapping a hog in shrimp

True I have a pellet and it has its purpose, but if I am grilling something that needs to be grilled I get some coals or turn on the gas and do it that way. my pellet is good for long and slow cooking as the temp fluctuates too much when you open it.

If you've never burned or screwed up a meal, you haven't been cooking long.
