WOULD love to have something like this. Always liked and respected cajun cooking.

Out of the book you posted, I'd like to see the Crawfish Bisque and Banana Pudding/Rum Sauce recipes

Another random bump. I found a copy in a bookstore in the French Quarter. $100 for a signed copy. It has a green plastic ring binding. I trying hard not to buy it.

His crawfish pie recipe is the one I use, and it is very straightforward and good.

I have not really been disappointed in anything out of this cookbook, and I have probably made a dozen recipes from it.

Can somebody please post Roger's Cajun Cookbook recipe for bread pudding. This is my favorite dessert and I'm always looking for new recipes to try.

I have the "Lite" version, and there's no bread pudding in it.

ETA: I think there are 4 versions of his cookbook, each in multiple different editions. I have 2 - the 1987 edition of the regular cookbook and the 1989 version of the "Lite" one.

There's also a "Lagniappe" version and a "Holiday" version.

I found it! Roger calls it "Pootsin".

It's in the regular version.
