Have some family members headed to Hilton Head this summer and I told them I would get some recommendations for them.
I think there are over 20 courses on the island...
Also, are there any Par 3 courses on the island?

Sea Pines has their three course which are insane and expensive. The Palmetto Dunes has an amazing set up also. The Robert Trent Jones course there is right one the water. That would give some nice bang for your buck also.

I've played both The RTJ and Arthur Hills Courses at Palmetto Dunes and they were great.

We played Harbour Town, Herron Point, and Atlantic Dunes last year. Harbour Town is obviously the winner here, but the other two were good tracks.

I've played Oyster Reef and Golden Bear at Indigo Run.
Of the two, I would recommend Oyster Reef no doubt. Golden Bear was not nearly as nice as I expected.
