I like your fish list but would go with 2 pairs of the same kind of rams, ~10 more panda corys instead of the pygmy, double the tetras, more pearl gouramis to keep their aggression down, and either/or on the garas/plecos. Not a fan of crawfish. Your shrimp will do a lot more and probably breed enough to make up for any losses.
Rams depends on what you can get. German varieties like to be hot compared to Bolivians.
What are you doing for substrate? Soil with a sand cap is a cheaper alternative to gravel and you have some nutrients without adding root tabs.

Here's my current 29.
Compact swords in front, driftwood, then rotala in back. Organic miracle grow with sand. 6 pepper corys and 6 glowlight tetras. Pond snails came in on the plants. 2 filters to keep water moving because it's 74-77 without a heater. Initially wanted to get some rams but haven't had luck finding good looking ones. I want to add another 6-10 tetras and might call it at that.
I change a bucket of water a week to water some flowers. I rinse the filter cartridges off every couple weeks and change them after a couple months. Very low tech and minimal involvement. The deep substrate is awesome for keeping a tank stable.

Well I found a paired up set of Blue rams today at the fish store and I bought them. I may do Black rams as the other pair. They are essentially the same fish as the blue rams, just a little darker color.

Any reason for this suggestion? I haven't loved the pandas cuz they don't shoal tightly at all. I liked my fals Julie cories I used to have alot cuz they shoaled together almost always. I want the pygmys because they school well and they also school mid column some of the time.

I had a pair of Pearl Gourami in college and they weren't aggressive at all (which is why I want them). I know other gouramis are aggressive but the Pearls are nicknamed the peaceful gourami. I plan to get a Male and Female pair. Do you think I just lucked out with that pair being peaceful?

This is the one thing my son really wants so I will get it for him. They are dwarf crawfish so they only grow to a couple inches and aren't a threat to any fish or plants.

I think so too. But I also think my numbers are dwindling in my 29G so I am not sure the colony is as healthy as it once was. From what I have read, it could be a lot of reasons they are dying off. They also could be just fine and I am just not seeing them as much.

I plan to keep the tank at 80 degrees. I know thats on the low end for Rams but I don't feel comfortable pushing it any higher because of the plants and other fish. If the rams don't work out, I will do Apistos or maybe Pea Pufffers.

I am doing gravel in media bags and then Black Diamond blasting sand on top. I picked this sand for 2 reasons, 1) its cheaper than regualr aquarium sand and 2) most if not all of my fish come from mud bottom rivers so the black sand is closer to their natural habitat but won't muddy up the water column like dirt can.

Thats a great looking tank. I am jealous of yalls drift wood. I wasn't able to find any big pieces like that or the one Red posted for a reasonable price and I am scared of using wood I find in a park.
I do think I created lemonade with my lemons and built a good structure by combining the smaller pieces that I have together.

Nice man should be nice. I’d start boiling/soaking the wood now. That piece of wood I had in my tank kept staining the water for damn near a year.
Just put the wood in a bucket of water today. Hopefully soaking for a month will help. I will also boil them when we get closer to the build day.

MD is who I’m trying to emulate with this build. I obviously won’t have his skill and I won’t be doing anything like “only Amazon fish”. But I’m trying to build something similar to his no water change tanks.

Bert (and all) what do you guys use for a vacuum? There is crap as far as selection goes and was thinking of DIY'ing my own with a built-in motor for suction.

for my 75 I bought the Python no spill water change system. it can definitely be DIYed for cheaper but I just went ahead and bought it. I am also thinking of possibly buying a cheap pump or something to attach to the hose to remove the water to make it quicker and to save on some wasted water.
Pro: No buckets and easy to use
Cons: wastes more water and your tank needs to be close enough to a sink for the hose to reach. (My hose is 50 feet)

That's why I stick to nano fish. They don't eat plants or each other for the most part and you can put a lot of them in a tank and get a glimpse of life underwater.
