I also find that the fitness rings on Apple watches take some time to catch up to workouts. I use mine as a HR monitor on my Peloton. It will record a 45 minute workout, but not update the active minutes or calories burned right away. I usually work out at night, and will be around 15-20 minutes for the day before that. I glance down when I'm done and it has counted maybe 20-25 more minutes, but 10 minutes later I'll get the buzz and tell me I hit my goal and update calories burned.
