I’ve personally been to those wet markets as well, and no I never saw anything like a bat or a pangolin there. I saw a bunch of crazy shite, like insects and exceptionally illegal animal products (rhino horns for example) they were trying to sell, but nothing like a bat or a pangolin.

I am adventurous with food and will try almost anything. I have eaten fish head, donkey (yummy), yak, jelly fish, organ meat, pig's blood, duck blood (yummy). Never have I seen any rodents or flying mammals. Chinese are proud of their local cuisine and want you to enjoy it with them. I have a standing invitation from a professor of modern Asian history to compare donkey and dog while drinking the finest baijiu in Beijing - I will probably take him up on it if I ever visit again.
