Freauxzen had some great suggestions to introduce new people to modern boardgames. I would add:
Splendor
Just One
Mysterium
Wingspan (a touch more advanced)
Some of my favorites lately have been Beyond the Sun, Lost Ruins of Arnak, and Underwater Cities.

+1 to this. Seems a little complex at first but you can catch on the rules quickly. Nice twist on the strategy.
