There’s likely more to this “interview” than simply the OC position. The Bears interviewed Kliff Kingsbury last week for their OC position, but much of the conversation centered around Caleb Williams.
The Falcons could be doing something similar, using the interview to gather insight into Brian Thomas, Malik Nabers, or possibly Jayden Daniels.
Raheem Morris and Hankton have crossed paths in their careers. Morris could also be doing an old friend a favor by interviewing him, thus raising his profile in coaching circles.
NFL interviews are rarely what most people envision. There isn’t a boss on one side of the table asking a series of questions to a potential employee. “Interviews” are conversations about football philosophy, techniques, trends, etc.
Again, Morris and Hankton know each other. Both realize Hankton is a long shot to be hired, but worst case is an up and coming college coach spends a few hours talking football with NFL coaches and executives. Both walk away with insight and knowledge they didn’t have beforehand.

They aren’t hiring habkton as OC

I think very highly of Hankton, and I can see the Falcons hiring him as a WR coach, but I am not sure that he has the credentials to be an NFL OC right now.

Dude, he wasn't going to get the OC slot. Zac Robinson is now the OC at Atlanta, like I said.

This was done as a favor so that Hankton would become familiar with the NFL interview process.
