I generally agree with you here.
On the flip side, one needs to resort to special pleading when asked the question, "If everything needs a creator, what created it?" We then get, "Nothing, the creator always was," which is just a differing form of hand waving.
Alrgihty...back to mowing the lawn.

It also happens to be a pretty standard definition of God, or at least the God of Abraham. And it has been since the beginning of the Abrahamic religions, not just as a recent definition formed to answer a difficult philosophical question.

We just have to accept that human intelligence is limited. There are things we just weren't meant to comprehend, nor are we capable of doing so.
