Pork adobo ah la Philippines style, with vinegar & soy sauce as a fake bottled gravy?

I eat that stuff sometimes here in Abu Dhabi, as there are at least 100 Filipino restaurants here, as there were 4-5 when I moved here, now too many. But, when I cook for Filipino hotties they love the Cajun gravy, or roux based dishes.

BTW, 90% or more of Filipinos here in UAE think the word Cajun means sauce on boiled seafood, or some kind of spice only on seafood. I love educating them and telling them Cajuns are people. They don't put any seasoning in the boiling water so they have to put that sauce on the seafood, then drop it on the table with a bunch of pockets of rice... actually its not too bad.

Is it the Vietnamese who moved to Louisiana and Texas who started that greasy garlic sauce, like you can find in Houston in China Town and all those China/Vietnam restaurants on Bellaire Blvd?
