I like playing points with 3 guys. Each hole worth 9 points. If the three guys go par, bogey, double, the points would be 5/3/1. All make par, 3/3/3. One win, two tie, 5/2/2, etc.
Can make points worth whatever, use handicaps and play off of low man.

This was going to be my suggestion for 3 people as well. That or just skins.

Game of 9's. I played this a few weeks ago with a guy from work and his buddy. They invited me to play when there regular group couldn't make it. Fun game and easy to keep up with.
