Define “on the regular”.
How many of the millions of married women in the country are hanging out alone in hotel bars? Or even bars in general?
I think you're conflating things, truthfully. The women who *won't * do the hotel bar hookup are the ones who don't go in the first place. Good women, who want to stay faithful, don't hang out in places where they're likely to be hit on/picked up. Instead, they check in, hit the hotel gym, and likely have breakfast alone. Otherwise, they're in their room, facetiming their families back home. Y'know, just like decent married men are doing.
But the ones who *do* want to, or are DTF, they're hanging out at the bar with a glass (or three) of wine and nibbling on their $20 salad.
Hooking up with strange ain't my scene. But I do observe, and I pay attention to my surroundings. I used to stay at this one hotel in Chicagoland often enough that I was friendly with the waitstaff. They could spot the whore class before I could. It's absolutely a thing.
It's even a major subplot of Up in the Air, which is an excellent flick about corporate travel culture.

I don’t disagree with any of this. And perhaps I misunderstood your post when you said “on the regular”. It sounds like you’re talking about a subset of women, I took what you wrote to mean that it is a regular thing among all married women.
I will say though, while I don’t doubt this is a thing to some degree, I’ve never really seen it to the scale you’re implying. I traveled once or twice a month for about three years (ten years ago) and maybe it’s because I wasn’t looking for it, but I just didn’t see it.
Maybe you have to have an eye for it like the waitstaff you mentioned….or maybe it’s because I operated exactly like the women you described in your first paragraph (pretty much the only thing I wanted to do was workout and call the wife and kids) so I have no idea what I’m talking about.
