Looks delicious.
My students made this recently. My technique is slightly different because we do not have woks and we included the bacon in the final product. Very similar recipe, give or take a couple of ingredients but similarly simple.
They were shocked at how simple it is to make.

I did my first shrimp fried rice recently...have done it twice since. Fantastic and easy.

It is one of my favorite quick dishes to make. Simple and delicious.
My Cajun MIL says she's been eating egg fried rice since she was little and for most of her life, she didn't know it was a Chinese dish. The flavorings are different but basically the same thing.
Not sure if it is just a thing her family did or if it's common in Cajun cooking. She's from SW LA rice country.

Breakfast fried rice is awesome with bacon, egg, sausage, and ham.
