Because there are a lot of characters.

List of characters that weren't changed off the top of my head.

Hux- incompetent brat in both movies.
Snoke- no change other than being dead
Poe- no change besides following a woman's orders
Finn- No change other than a girlfriend
Chewie- seems the same to me
Leia- no change except for newly found Merry Poppins abilities


Characters that changed in worse ways
Luke- we waited 30 years to see what a badass he became, but he became bitter and never even risked his own skin.

Rey- she is quickly becoming a great Jedi with zero training. That's not very interesting.

This is just off the top of my head. If you want more in depth analysis of how shitty the writing was on this film you will have to wait until tomorrow. Set all the fanboy crap aside and this film was was broken from the day they wrote the script. There was no hope for it past that point with that script.
