I planned on making this soon, but it looks like the only Jamaican Rum that Total Wine has in stock is $60+... which I don't want to spend if I'm making a mixed drink with it.

Would spiced rum be pretty similar? I'd never heard of Jamaican rum before looking at this recipe so I'm pretty unfamiliar.

Edit: also, does this need to be stored in the fridge like Alton says? Or would it be okay aging in a dark pantry?

Go to a local place. They’ll have more selections of rum. I got mine from Hokus in Pville

yep got 1 1/2 gal sitting in back of frig for this season but need to make some for next year and Christmas gifts!

Anybody had their nog separate on them?

It looked like the cream separated from the alcohol in one of my bottles. Everything smelled fine and re-emulsified after shaking it, but I threw it away out of precaution.

Don't feel too bad, I'm really looking forward to having fridge space back after having multiple bottles in there since January.

Can this be stored at room temp? I’ve been making homemade nog for 5 years or so now. I usually make 30-40 bottle and hand them out. I’ve gotten so many requests already this year that this will be my biggest batch ever. Just hate taking up all the fridge space.

It tastes amazing right off the bat.
Can’t wait to try it after it ages!

Question, I wanted to make a non alcoholic one for the kids, would that be safe to let it age? Or does the liquor keep the stuff from going bad?

I guess I could make some right before Christmas for the kids and have them drink it fresh.

Any of y’all do this?

Don’t age non alcoholic eggnog! IIRC the ABV on this stuff is around 20% which, along with the high sugar content makes it safe.

Google Alton Brown’s Eggnog recipe. Omit the “aged” in your search and you should find his other recipe which is intended for immediate consumption. I believe it uses 4 yolks (not a dozen) and folds in beaten whites at the end. This one you can omit the alcohol. Or just put a teaspoon to tablespoon in to flavor (that would be like using vanilla extract which approaches 70 proof).
