Turned out pretty good. It's the first time I have tried marinating something I was going to smoke and I think it was a good idea. I'm going to try to find some American BBQ style marinades to try this summer

If you are doing a proper Cuban mojo then some of the suggestions (like coating it in hot sauce) are going to mask the flavors of the mojo. I'd keep the toppings as fresh and clean as possible so the pork is the star of the show.

BTW, a Cuban marinade IS mojo. Where are you getting Seville (bitter) oranges for the mojo?

I did this this past weekend.
made a pineapple salsa that paired great.
pineapple
red onion
red bell pepper
jalepenos
cilantro
lime juice

This sounds amazing but we have got to stop calling them street tacos. They're just tacos. You would never walk into a restaurant in mexico and order "tacos calle por favor".

Cilantro Lime Sauce Slaw.

-1 bag of slaw - not dressed.
-1/3 cup mayo.
-3 tbsp sour cream.
-1 clove garlic.
-1/4 cup cilantro (I use a little less usually).
-2 tbsp lime juice.

-mix all together. It just lightly dresses the bag of slaw, but, I like it that way. If you like more dressing then I would add a bit more of each item for the sauce.
