Gene Hackman and Morgan Freeman two other actors who have gotten better as they have aged and are versatile in what roles they can play.

John C Reilly went from very serious actor in award winning movies to being known as the comic relief in movies.
He was brilliant in "Stan & Ollie" the story about the final years of Stan Laurel and Oliver Hardy's careers in show biz.

Kathy Bates, too.
Started her acting career with a bang, winning an Academy Award for her role in "Misery" playing the sadistic ex-nurse.
That scene where she takes a sledge hammer to his ankles still gives me the creeps.

Bette Davis went from a sex symbol early in her career to playing crazies and horror roles later on. I’ve never watched her early stuff, but she could be pretty creepy in her work 1960’s and on.

Josh Brolin. Did he even have a career between The Goonies and No Country for old men?

Good call. He portrayed Whitey Ford really well especially considering he isn’t right handed.

Jesse Plemons has grown into a fantastic actor.....didn't see that coming when he was Landry on FNL.

Hollow Man with Kevin Bacon is the only thing I can think of

Rob Lowe. I don't think anyone knew about his comedy chops until Parks and Rec.
He was pretty funny in Wayne's World and Tommy Boy. Straight guy funny, but funny.

she was always a remarkable actress, took her craft very seriously, which is why the studios never managed to turn her into a traditional sex symbol

. I personally think he’s great now compared to what he was in his 20’s.

He seemed to age too fast. He went from the pin-up teen to a weathered out Malboro Man in like two years. Obviously he later found a niche for that but there was an awkward period where it was like parents yelling at Charles Bronson to clean up his room.
