Well he did say he would only cook for them once, so age wouldn't be a problem. Now, they may think they can force Jesse to cook the blue for them a lot longer than that and thus why they decide on him.
A thought that just came to my head: What if Walt agreed to do this one cook so he can destroy their group from the inside? He has always stated the blue meth was his empire, and despite being "out", I don't think he would want anyone else mimicking his product

I've been thinking for a while that the gun is not really for him to go and take out a bunch of people, rather it's him going to take out a structure, specifically, the Nazi's meth lab.

Well if he wants to take out a building or something, he'd be better off with the magic explosive stuff that he used in Tuco's crib.
