Definitely rent an ATV and ride around the island. It didn't feel unsafe.

Now Mykonos is another story -- no way in hell I would ride an ATV around those maniacs.

Santorini was great for 2-3 days. 3 is stretching it. 7 is wayyyy too much

This is what we did. Stayed in Perissa and vineyard hopped around the island on an ATV for two days. Even made it up to Oia for the sun set. Driving back in the dark was a challenge, but we made it to the hotel safely.

3 nights in Santorini is about perfect. I’d recommend staying in Oia if you can afford it. Worth the hype.

We did Milos -> Santorini -> Ios -> Naxos and if I were to do it all over again, I’d choose the first two stops.

You can fly directly into Milos from ATH and then ferry to Santorini. Two of the most beautiful places on earth.

We went last year, had gone previously 12 years ago and I couldn’t get over the influx in tourism via cruise ships in that time. That being said, we were there for a week and while that’s definitely enough to see the whole island, it was a nice laid back place to see at your leisure. I would definitely ask around for restaurants. With the influx in tourism there are a lot of generic foods (Italian etc), but your concierge should be able to help you with authentic places to eat. Car rental is affordable, we did a good ATV tour over the whole island and it was worth it. Overall good trip.

Stay in Oia in a place with a private pool and view. Settle into cocktails as the loads of cruise ship people use their sharp elbows to push each other around as you watch in the comfort of your private balcony. Laugh at the line of people waiting to take Instagram pics by the blue dome. It gets very busy right before sunset but the mornings and evenings are very pleasant.

Hike down the path to the water. Swim out to the St Nickaolas chapel and jump off the ledge.

ETA: pro tip. If Santorini is your last stop, fly from Santorini to a major European airport. Santorini > Amsterdam is a nice side trip before the long flight home instead of backtracking through Athens
