Sausage balls

I’m sure folks around here have various recipes. For whatever the ones people bring to work/get togethers always seem dry. Damn near choke.
I tried my hand using red lobster cheddar biscuit mix. Even added garlic packet
1lb Jimmy Dean hot
8oz bag shredded sharp cheddar ( I bet pepper jack would be awesome too)
8oz cream cheese
Splash of milk
Mixed thoroughly
Rolled into a ball and put a cube of Colby in the middle
425 for 20 minutes
Damn moist and cheesy
Highly recommend

We make them every year, never put cream cheese in there before
We just do bisquik sausage shredded cheese and water to mix it together if need be

I've tried a lot of different ways, but I've settled on the below. This is what I settled on after I tried way too many recipes that call for a ton of Bisquick and hardly any sausage/cheese. I also found that you don't need a liquid at all if you don't want it, so I nixed milk altogether. But I'm sure a splash makes it easier to mix.
2 cups Bisquick
1 lb freshly grated cheddar
1 lb Jimmy Dean hot
mustard powder
Crystal
2 cups Bisquick

Love the idea of using the Cheddar Bay mix…love that stuff. Definitely trying it. I make sausage cheese balls a lot, and they will be dry if there is not enough sausage.

I just poured the bag mixture in a bowl. I didn’t follow any instructions. I bet some minced jalapeños would make these even better

Fresh grated cheese is key. Bagged stuff has starch added to prevent clumping and it will make things dryer than they should be. I use bisquick, fresh grated Colby jack, and hot sausage if making it for me or mild for taking places. Sometimes I’ll add a little buttermilk to the mixture. Don’t make the balls too big and I bake them on 425 so they cook fast.

I found out the other day that the precooked jimmy dean sausage is way too dry to make sausage balls.

Try them in the air fryer instead of the oven. They get nice and crispy all over.

I made the Red Lobster Cheddar Bay shrimp balls that were pretty good. They needed a dipping sauce. Cousin’s Creole Tomato Dressing was perfect.

I would think so. Not really sure how cheese interacts with hot oil. I guess people deep fry cheesesticks regularly though...

Mix, no water, then 350f for 25 mins
Reserve the seasoning pack and 1/4 cup butter for brushing when done.

Made this one tonight with Jalapeño Pimento Cheese. Wife and daughter at a dozen right off the bat. I had to go get more JPC to make a second batch. Yield was about 25 balls each batch. Best I've had, and uses only 1 1/2 cup biscuit mix.
