Last Monday, I cooked a Greek seasoned tri-tip, fajita seasoned chicken and 2 lemon dill pork tenderloins. The chicken ended up in a casserole with onion/bell pepper, rice and enchilada sauce and topped with cheese. The pork will go with steamed broccoli tonight, and the tri tip was eaten throughout last week.
Crock pot roast and chicken, shredded for meals for the week.
Roasted cabbage steaks are easy and very filling, especially with the above shredded meat or taco meat.
