I have 12 hearts and 2 full stamina wheels. Just wondering, should I now alternate hearts and stamina going forward or prioritize one over the other?

I'm in the same boat. I think I'm going to alternate.

I would collect 8 of the light spheres and then go back and get 1 of each at a time. So essentially I alternated

What's your playstyle? I run around a LOT in battle and do a lot of bullet time, so stamina is a bigger boon to me. I only do CQC situationally. Against tougher enemies with a lot of range (like charging Lynels or Gleeok deathbeams) a hasty elixir usually gets me enough separation that I rarely get hit. Granted any hits I take will probably outright kill me, but having a few faeries on hand mitigates that.

The added stamina has a lot more situational use if you ask me. I'm doing roughly 3:2 stamina to hearts right now and probably will until stamina maxes out. But if you're running head-first into combat and relying on handheld weapons/shields more often, then hearts are probably better.
