Greek & Lebanese Salad Dressing Recipe? UPDATE: RECIPE FOUND

Anyone have a solid recipe for a copy-cat style dressing that is commonly used in Greek & Lebanese salads? Restaurants like Zeus, Athena, Shawarma Guys, etc.
Nothing big box store comes close. I figure it's olive oil, lemon juice, and an assortment of spices.

Don't have a recipe but I think raw minced garlic is a key ingredient.

Zorbas has a great house dressing…one of my most favorite restaurants in Baton Rouge….owners are from Greece…..

I was told several years ago that instant potato flake is an important ingredient to the ones common to Baton Rouge. Previously mentioned, toum or minced garlic is another.

I just found out they sold it by the jar at least at the express locations. I always keep some in the fridge now.

One day I’m going to attempt recreating their dressing. Rumor is the base is whipped olive oil and feta. I know there’s garlic but the rest is the spices are a crap shoot. I think there’s maybe some dill in there? Something also give it a little bite.
If I ever come close I’ll go into a dressing coma.

There’s no dairy in Albasha’s dressing. Definitely toum and I think you’re right about the dill.

Toum. That’s the word I was looking for. There’s a small pick up only place on the West Bank in Gretna called Sultans Shawarma Shack that has an outstanding toum they serve with everything. The consistency matches Albasha but that’s about it. That one is heavy garlic only. Albasha’s has way more depth. I wonder is there’s any sumac in there?

I talked to them, and as others have said, no feta. It's an emulsion of oil (I use olive), FRESH garlic, oregano, and lemon juice.
Curious about the dill. I'll have to try that to get it closer.

Directly from Athena and Shwarma Guys , friends with both owners. They shared with me the ingredients as I had to experiment on the amounts. Below should be close, improvise per your taste.
Salad Dressing:
1 tsp dried mint or 1 T fresh mint fine chopped
1/3 cup fresh squeezed Lemon juice
2 Garlic cloves , minced
1 tsp coarse kosher Salt
1/4 tsp of fine ground black pepper
1 T Za’Atar seasoning …. Or 1/2 T Oregano & 1/2 T Thyme in no ZaAtar.
1/2 cup EVOO
Add ingredients into pint sized Mason jar , whisk together, shake , refrigerate. Increase recipe amounts if needing more dressing.
use Romaine Lettuce; fresh and crisp. Add Chopped cucumber, top with feta cheese, diced tomatoes and Kalamata olives if you like.
Edit: go to Athena on Ambassador next to Chuck E Cheese as they have a large retail selection of groceries including 3 types of Za’Atar seasonings. Everything you need to make Lebanese food at home … tabouli salad, hummus, rose water, etc…

I've been making garlic paste for 30+ years using this method.
It was taught to me by George who owned Green Olive Lebanese restaurant in Lafayette, across from Bayou Shadows on Congress.
easy to follow for roasted garlic paste

season with salt and whatever you want

140 degrees for 2.5 hrs until soft, cook 15-30 min longer if needed.
Mix any extra unused cloves with EVOO and store in fridge using a small glass jar (I use baby food jars)

ideal for that perfect garlic bread ....
If you eat this much garlic you'll never see a Vampire for the rest of your life

Chopped some fresh romaine, washed/dried. Seasoned with salt, topped with diced tomatoes, diced cucumbers, shredded red cabbage, feta. Dressed with a bit of dressing.
Bought some chicken shawarma and tzatziki from Costco and tossed that on top.
Delish.

To clarify, there’s no garlic paste and does it emulsify from shaking?
