There are a number of snow tubing places around Beech Mountain/ Banner Elk area of western North Carolina. They will at least have blown in snow if there isn't snow on the ground. Hawksnest is the biggest one. Should be under 12 hour drive.
Also, if you are renting a house or cabin, make sure to verify if you need 4 wheel drive to get to the place in the winter. We have run into this issue previously and will ruin your trip.
