Walk-Ons was mostly bought out by a private equity firm. They fired pretty much everyone from the corporate team here in Louisana. I know this because a good friend of mine was someone that worked in their management group.

The appeal of Walk-Ons was having decent food and drinks delivered by attractive & attentive young women in cheerleader-esque outfits while in a great sports bar/restaurant atmosphere with (usually) plenty of seating.
Corporatizing tends to whittle away at the original formula until it becomes generically bland. The food is still decent, but the attractiveness and attentiveness level of the females waiting tables has seriously nose-dived.
For the niche it fills, you have to have the attractiveness and attentiveness factors to differentiate yourself from other bars/restaurants. This is the same path Hooters has already walked (except I never found their food to be anything but bland).
