Question - can I take the little mimosa trees off the roots and plant them and would they grow?

Best to take those roots and put them in the trash can. Mimosa's are short lived and messy.
There are much better options. Oaks, even Cedar Elms.
Just not Mimosa nor Cedars.

I’ve transplanted several like that it’s hit or miss.
It’s a good specimen tree, pretty flowers and kids love to climb them

If you have a big property, maybe plant one amongst the many others for kids to climb. Otherwise, don’t.
I grew up with one in the yard for a few years, but when I see one now I assume the people living there are trashy.
