I don't think he's attacking Hollywood so much as he is deflecting from the obvious criticism towards a 69 year old stand-up comedian directing his first ever movie about Pop Tarts.
He's saying, "look, we aren't living in the good ol' days of Billy Wilder or Stephen Spielberg anymore...who cares if I make a movie." The bloom is off the rose.

Also Seinfeld totally fine taking the cash from Netflix to be able to add to his Porsche collection but he’s not wrong. TV series are where it’s at for captivating an audience, we love a deeper story and you can only do so much within 2.5 hours for a film.
More people talked about TV Series than any other movie over the past decade or even two. Serials are where it is at now for the future of film. Although multi-part films are a telltale sign of this since the MCU, Harry Potter, LotR have been impactful culturally.
