Recommendations Needed for Missouri and North Dakota

Only have two states left to go out of all 50 so figure this is as good a time as ever to knock this item off my bucket list. Not sure when the best time of the year is to visit Missouri or North Dakota, but guessing late summer/early fall here in Florida is a good time to venture out. Timeline would be a long weekend (Thursday night to Sunday). If anyone has any recommendations for either state, would be highly appreciated
Interests- Breweries, sporting events, national parks, festivals. Think single 30s age guy stuff. Definitely more on the laid back side of life now than the rager side
North Dakota- Only major cities I can think of are Bismarck or Fargo
Missouri- Kansas City and Saint Louis are the main airports to fly in/out of. Not sure where the good/bad parts are in either city
