Duck breast gumbo recipe

My son recently gave me a couple of dozen duck breasts (no fat/skin off). I've looked at Besh's and Folse's recipes and their recipes are mostly for whole duck with skin/fat on.
I'm thinking andouille and okra gumbo but not sure how to handle the breasts. They are very lean with little fat and don't want dried out duck breasts in the gumbo.
Anyone have a good recipe for this gumbo??

Not gumbo, but around Christmas a few years ago, I made duck breast pastrami.
It was one of the best tasting things I've ever made. Really outstanding way to make the breast meat shine. Not sure how much it would matter, but these breasts were nice big farm raised ones.
I've made gumbo with duck breast once before but the recipe wasn't anything unusual. Basically like a chicken and sausage gumbo, but I added the duck breast late in the process like seafood.

I would sear the off, then cube up and add to the simmering gumbo ~30 minutes prior to being ready. Or do a light smoke then proceed the same way.

Academy, WalMarks, Amazon all sell duck fat. Sear them in duck fat and as mentioned, add them to the gumbo 30 minutes or so before it's ready to serve.
Post back how it comes out.
