I wouldn't eat it cold, but if you reheat it again you will be fine.

All of this. Around 70-120 degrees is prime temperature for bacteria growth so AC isn't going to help it much. Restaurants have strict guidelines to follow on keeping food hot to serve to the public. Usually that food in a hot food case is thrown out immediately after lunch/dinner. You are not supposed to keep reheating food.
At home, you can chance it. I would rather not chance it past 2-4 hours maximum.

Okra for gumbo, tomato sauce for etouffee and jambalaya. I never mix okra and tomatoes.

Honestly, I'm not a big fan of okra. But gumbo without it just doesn't taste quite right.

Oops. Will be a cast iron pot. And I know you don't like it, but I'm going to let it simmer until the chicken gets a little string. That's how I roll.
