Yellow Squash Ideas/Recipes

Was just given a bunch of yellow squash and need some ideas of what to do with it? Don't want to just grill, roast or saute. . .

Slice thin, soak in ice water for a few minutes, bread in seasoned cornmeal and fry at 350 until golden. Awesome.

I love a good yellow squash sauteed with ground meat and canned tomatoes. Great low carb meal, satisfying, and reminds me when my lil cajun maw maw from New Roads used to cook it.

Medium dice the squash, saute/slightly fry in olive oil w/lots of garlic, lemon zest & a fat squeeze of lemon juice, plus a handful of chopped parsley. Then serve over pasta w/a generous grating of pecorino cheese on top.

Pretty limited if you are not grilling, roasting or sautéing. You can fry or make noodles as mentioned. My preferred method is cooking down with onions, smoked sausage (or bacon or Tasso), and fresh tomatoes. Call it a smother instead of sauté and get after it.

Love it grilled with butter and salt/pepper.
Not sure how you cook food in general by avoiding oven,grills, and cooktops.

Fry up some bacon, brown some onions & smother the squash (notice I didn't say sauté), add a lil pinch of sugar cause my grandma told me too.

Slice thin, sautée on stove for 10 min with your seasoning of choice.

Squash casserole

Fresh picked squash is such a treat. I wrap them in foil and bake. Then, split them open, add some butter, s&p and a little parmesan.
Sometimes, I make a simple casserole like this one. It doesn't bury the squash flavor.

I love the squash and thyme soup in the link below. It's very very good. I use a little more fresh thyme than it calls for.

This squash and crawfish casserole is pretty good.
Crawfish and Squash Dressing
6 cups yellow squash, sliced
2 cups water
1 large onion, chopped
1 medium bell pepper, chopped
1 clove garlic, chopped
1 rib celery, chopped
1/2 cup butter, melted
1 large egg, slightly beaten
1 cup seasoned bread crumbs
1/3 cup parmesan cheese, grated
1 teaspoon beau monde seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper
1/4 teaspoon white pepper
1/2 teaspoon thyme leaves
1 pound crawfish tails, whole
tabasco sauce
Put water and squash in cast ion dutch oven and cook till tender. Drain in colander. In same dutch oven saute onions, garlic, bell pepper, and celery in butter till tender. Add squash and egg and stir. Stir in remaining ingredients and place mixture in greased 12x8 baking dish. Bake at 350 for 30 min.

I literally have no clue what I did. I assumed it was some attempt at humor that was taken seriously. My requests for reasoning behind my expulsion was denied by the Gestapo.
