Lets start with the simple truth that even you cannot deny. Where does one get "metadata" and the "ability to prove authenticity". It certainly does not come from a COPY or anything PRINTED. It can only come from a source. So, what do we KNOW? We know that the email shown was AUTHENTIC and CAME FROM AN ORIGINAL SOURCE.
