Another roux and water amount question, jar roux

my friend tell me just take a couple of large spoonfuls of roux and mix in a large gumbo pot of water. Gave no measurements as to how much water to add for the roux. ??? A half pot of water for a couple large spoonfuls of jarred roux, or what???

Am I being too structured with amounts? Thanks

The pint jar if Kary’s says half jar per gal. Makes a dark but thinner gumbo. If you’re looking for a thick gumbo use whole jar.

Just keep adding the roux 1 spoonful at a time until it gets to the consistency you want. I usually add about half a jar of Kary's roux to a pot of water for gumbo.

Not in my book, but I am the calculator guy you know.

Gumbos in my Louisiana cookbooks have a stock(water) to roux ratio of between 7 to 1 (thick) and 20 to 1 (thin).

Pay attention to the ratio you like and you will be able to duplicate it whether you're making a large or small pot of gumbo.

Sorry I didn't really mean water, I meant liquid. Whatever you chose to use for stock. I use ham stock for mine.
