Anyone ever smoke a cajun meatloaf and then make a fried meatloaf po boy out of it?

Im thinking of using Paul Prudhomme's cajun meatloaf recipe, smoking it on the bbq and letting it cool in the fridge, slice it and then deep fry the slices and throw it in a po boy. Im not sure if I want to use remoulade sauce or mayo... Any have a good fried meat loaf po boy recipe they have tried and recommend?

Do your lettuce tomatoes and pickle. With the smoky I may consider a bbq rather than mayo or remoulade

Edit to say what are you trying to achieve my frying. If frying I might opt for a softer bread than a real crusty bread. Maybe brioche. Just my 2 cents

Smoked meatloaf is delicious. not sure about the frying part, that just seems like overkill.
Hot or cold meatloaf, mayo, white bread

My mawmaw used to fry slices of meatloaf, its a nostalgia thing for me.

Are you putting a batter on it when you fry it?

Smoked meatloaf I've done before and like. Never heard of frying it.

Just your basic hot or cold meatloaf sandwich with mayo and maybe some ketchup/siriacha is a classic sandwich.

Not deep fried but I always pan fry/sear up the ends of the meatloaf for some rocking sandwiches

Last time did it with a sriracha Mayo, fried onions and provolone cheese on ciabatta. Was amazing
