Coming to the end of our half cow, and the heart is is still here. I have never prepared a beef heart before. Does anyone have a tried and true recipe or method for cooking?

I used to slice into 1/4” “steaks” and marinate in balsamic vinaigrette salad dressing overnight then pan sear in butter about 2 minutes per side on high heat.
But now I find throwing it into a crockpot with a chuck roast and doing your standard Mississippi pot roast recipe is the best way. Good eating.

Heart is good eating. I've prepared it several ways. You do have to do a little whittling to cut it up, but that doesn't take long.

I sometimes cut it into small strips, along with beef liver (or omit the liver), brown it, then put it in a crock pot with onions, cream of mushroom soup, maybe some green peppers. and let it slow cook. Serve with rice or mashed potatoes.

Lately, I cut it into strips, saute it with onions, garlic, and green peppers and then stir in a mixture of spices and soy sauce that includes a teaspoon each of thyme, allspice, and tumeric, along with a 1/4 teaspoon of tumeric, black pepper, white pepper, and red pepper. Top it off with some lime. If you don't like spice, cut back on the three peppers.

This also works with beef liver.

Detroit Style Coney Dog Chili

Made it before and it’s just like the real thing which is delicious. The consistency just isn’t right without the heart.

Cut in half, clean off any fat. And lightly marinated in balsamic vinegar, shallots, and thyme.

Grill medium rare & rest before thinly slicing.

Serve with chimichurri or Italian salsa Verde.
