I was thinking about putting a plan together to start one after I finish this construction project and return home (18 plus months out)

I don't know what type I would want it to be just yet but the market is probably cornered on anything burger or Mexican related in that area

That's not a bad idea. I know there are a couple of popular pizza food trucks but I don't think it's that saturated

And it's a geographically big enough area where I'd just need to find the right spots to post up

This would be a part time thing on top of my regular job though so I'd have to start weekends only and look into hiring some help if I ever went full time

Nephew and his wife started one after he retired from the Marines down in Tampa a few years ago. Cheesesteaks and Pizza. Gary Sheffield is a weekly customer.

I was owner/operator of Three Bones food truck from 2009-2015. There was a flood of them for a few years there but it started petering out around 2012. We shifted into brick and mortar with more catering focus, but ultimately the service industry was too much of a grind and I sold it off.

If this will be your primary source of income be prepared to work every weekend/holiday and never take a day of vacation for several years. What city are you looking at?

I have a friend that does pizza pop ups. He has three Roccbox pizza ovens and tables, pop up tent, etc…for a pop up and will go set up at any market, festival, ballgame and makes a great pie. He’s by himself and cranks out as many as he can and most people know it might take a few minutes and if they don’t they just move on. He has a F150 and just pulls up stakes when done and as far as I know he has never been asked to leave a spot. But if he did he wouldn’t have a problem.

The truck is his daily driver and his gear is nicely stored in his garage and he does it whenever he feels like it. Makes a good yeast dough that he ferments a few days. Buys the pizza boxes at Restaurant Depot and only makes about 3-4 different types. Simple and good.

No extra insurance, maintenance, cost, somewhere to store if he had a trailer or food truck.

Low overhead and he makes whatever cash he wants . Cash, Venmo only.

To me it’s a good way to do it. A lot cheaper, and if you don’t like doing it you have very
little invested and can always sell off. Plus all the equipment needs a very small footprint to use or store.

Get a one man pop up, a few 8’ Lifetime tables from Home Depot and get after it. Think the Roccbox are about $500

Gotta be careful with this. Get popped by the health department with no license, commissary, insurance, LLC etc. Some crazy person decides you gave them food poisoning, or worse, someone actually dies and they can trace it back to you. This is rare but does happen.

Great idea for a popup but I'd want more bumpers in place before serving the public.

Good advice. I’ll throw in my two bits.

Powerman, apply for a Walmart greeter position. Less risk. Dependable income. No brian surgery skills required.

Good luck.

Surprised you didn't add something in about extremely disgusting raw ground beef for good measure

A Parisian food truck would be cool too, but how do you make tartare hand held? Crepes, confit duck legs…

We were at an event once where a guy sold hand held Frito pies - gas station bag of Fritos with pulled pork, BBQ sauce, and a plastic fork stuck in it for $5. He murdered it, we had an alright day after he ran out of food

Otis has a point though, I might chop off a limb and apply for disability before heading down this road again.

Central Texas style BBQ. There’s a guy here in Ruston that used to work out in west Tex in oil and used his vacation he had stored up to travel central Texas and pick up some of the tricks of the trade. He opened a truck here(bad wolf bbq)around 2018 and has been killing it. People are lined up 10 deep or more every day 11-2 or until they run out. Good Brisket will sell anywhere.

I've always wanted to open one in Grand Isle during Spring/Summer. Crazy to me that there isn't a pizza place down there. Group of lit dudes coming in from offshore fishing just get a few boxes of pizzas would be clutch. And golf cart the beach selling slices.

Cheesesteaks (unless there is already a truck doing them). Seems like you could streamline the process easily.

I frequent a food truck in town that is a BBQ. Good BBQ does sell. The guy markets on FB and parks outside a bar. Oddly enough the bar sells food but it's mostly finger foods and limited menu.

I always thought the appeal of a food truck was that their food was cheaper because they don't have rent or all the overhead of a restaurant. But it's rarely cheaper. Whatever.
