Anyone here own a Gevi espresso machine?

I got one for my birthday. I’m loving this thing. Funny thing is, I cannot stand coffee without a ton of sugar and milk, but could drink my weight in espresso (no sweetener or anything).
I have a small coffee/spice grinder. All I’ve done so far is just finely grind coffee grinds, just to get a feel of the machine.
The problem I’m experiencing is the double fill doesn’t pour evenly, plus the thermometer drops 20 degs before the pour is complete. The thermometer won’t reach the espresso temp (180 deg) to begin with.
The thermometer doesn’t reach the higher temp for the steam setting as well. It does steam/froth the milk fine.
I know this is a less expensive machine, so is it just that, or something else?
Am I grinding my grinds too fine? My grinder makes the coffee in near powder.

The espressos, lattes, and cappuccinos I’ve made so far are awesome, but something just slightly off.

Assuming one of the spouts isn't clogged or there aren't any burrs from cheap manufacturing on the openings, this is typically caused by inconsistent puck preparation. Either the grounds aren't level, aren't packed evenly, or aren't packed well. Air pockets in the puck allow the water to press through unevenly.

I’ll try and pack it tighter. Can you “over pack” the grounds, make them too tight?

Technically, yes. Honestly there are 500,000,000 YouTube videos for espresso puck prep that can explain it better than me here and take less of your time.

It's turned into one of those hipster trends, so it's everywhere.

Romans told me to buy the ex-wife a Nespresso (original) and I chose to trust them. The decision did not disappoint.

That’s just a mini-cup Kurig, isn’t it? Still just used pods

Technically, yes, but in actuality, no.

So many things go into puck prep, but I just make sure my weights are on point, quick declumping with the WDT, and an even tamp

Similar. Whereas the Kuerig lightly pushes the water through the pod, the Nexpresso does some weird spinny shite with their pod that pressurizes the brew more like an actual espresso machine.

Yes, but you're not packing your own grounds, and Keuring wasn't even on the radar of the Italians. These people "took a coffee" five or six times a day. They're so wrapped up in it that my company at the time subsidized their espresso purchases while they were at work. They're serious.

For consistent results
1. Grind beans to the right coarseness (avoid too fine or too coarse).
2. Tamp properly (keep the portafilter level, tap it gently to settle beans, tamp with right pressure and angle).
3. Ensure the top of the ground beans is level in the portafilter.

Remember, like Tigerfanatic wrote, there are videos on tamping, especially for Gevi machines. Also, clean the portafilter and brew head after each use, and follow the manufacturer's cleaning instructions.

I've never used, but I've read a lot on how these tampers provide consistency. It took me awhile to learn the proper angle/pressure/amount of beans to use when using my machine. We have a Breville Barista Express that has different grinder settings that have to be adjusted depending on the bean.

Thanks for the link. I have the same machine (Breville). I use descaling tablets daily, it’s an extra step but imho worth it.

Ok, after a little experimenting today, I lowered the amount of grounds, and it poured very nicely (both spouts). The espresso was a little weak to my taste, so back to the trial and error step. I’m getting closer.

Are you weighing your grounds to make sure your output is about double the weight in 28-34 seconds?
