Bad Fried Oysters

Got a fried seafood poboy, it contained 3 fried oysters.
The oysters were black, very gritty, and fishy tasting, but the breading looked normal.
What happened? Bad oysters? Overcooked?

That happened to me about a year ago. I still cannot eat fried oysters. It sucks, because I used to love them.

I hear you on that Coach Chappy. I tossed them out my po-boy and have no desire to ever eat a fried oyster ever again.
That said, there's nothing like a good fried oyster. Previous oysters from this place have been on point.

Had a really bad oyster poboy recently. It was not in this state. Black. Gross. Tasted like mud.

What restaurant?
Walt, I don't want to call them out because this was the first bad experience I've had with the place. Normally all of their food is amazing. I'll just say it's located in the Lafayette area.
I'm not real experienced with frying oysters, I'm wondering if it was bad product, or overcooking it.

What did the manager say when you asked him/her.

It was takeout. I just threw the other oysters out and moved on with life. Next time I dine in I'll be sure to bring it up with the manager. It's locally owned so I'm sure they would want to know.

I'm guessing maybe too long in the cooler , or maybe too long in the freezer, before use.

No restaurant I know of locally would ever use previously frozen oysters, especially when frying them.
I've frozen oysters in the past and only used them in soups or gumbos, never fried, grilled or to be eaten raw. The freezing process really affects the quality of the oyster.

I know some that use them. Not sure if they fry them though.

never had a bad fried oyster, but I got a bad raw oyster one Christmas. unbelievably, horrible 4 days after ingestion.
But I'll still eat a raw oyster.

Similar here. Had bad ones from Chimes years ago. let's just say middle of the night there were fluids and matter flying into a toilet and the bath tub simultaneously. Haven't had them since.

The point of my post wasn't to expose a restaurant, the point of my post was to try to learn what causes oysters to do that.
OTIS and gumbo actually attempted to answer the question.

Maybe you’re not comprehending the purpose of his post.
It’s not to run down a local restaurant that he actually has enjoyed in the past. The point is to ask in general about bad oysters.

Sometimes an oyster is just bad. We have a video of my dad, standing on an oyster boat, slurping up a freshly harvested oyster than immediately spitting it back out. It was bad. Looked fine, smelled fine, tasted like the inside of a dead cow's arse.
