Anybody got a good baked beans recipe? I'd love to find Podnuh's or Danken Trail in the Mecca's recipe.

Danken Trail beans were the tits years ago. They left an indelible burning sensation of the esophagus and both intestines that lasted several meals after consumption.

Danken, and probably Podnuhs, uses the fat/trimmings off there briskets in their beans. That gives it the smoky meaty flavor. Fantastic beans. You can do a similar job by jazzing up Bush's baked beans with brisket trimmings, some mustard, honey, garlic and BBQ sauce. Or just use some browned ground beef with the above and put your pan on your smoker uncovered to get some smoke.

I used to love Big John's Beans 'n Fixin's, but I haven't seen it on the shelves lately.

Here a copycat recipe for a small batch:

Big John's Beans 'n Fixin's

16 oz Campbell's Pork & Beans

The Fixin's

1/2 cup Manwich brand sloppy-joe sauce (Heinz works well too)
1 1/2 Tbs Hormel real bacon bits
1/2 Tbs sugar
1 1/2 tsp molasses
1 tsp dried, minced onion
1/8 tsp salt
1/8 tsp ground mustard
1/16 tsp pepper

1. Combine the ingredients for the Fixin's in a small jar, cover, and refrigerate at least a 1/2 hour (this allows the flavors to meld)

2. Empty the can of beans into a small saucepan, and stir in the pre-made Fixin's. Over low-medium heat, bring the Beans and Fixin's to a simmer, stirring occasionally. When heated through, serve.

Thank you so much for explaining this… I was trying to figure out if they used butter. It makes sense that they would use trimmings though… Looks like I’m going to start saving mine up!

that does look good
usually we are lazy and just add a can of bush’s and a can of ranch beans to some wilted aromatics and then doctor up from there. The ranch beans cut some of the artificial flavor of the bush’s

also helps to throw the skillet on the pit uncovered for a half hour or so

No recipe but use brisket if you have some.

Corkscrew BBQ had the best I've eaten.

What do y’all use to thin out your Baked Beans? I made Cajun Ninja’s recipe and there was hardly any liquid left once it was done. Tasted great though, just needed some juice.

BAKED BEAN CASSEROLE

1 Vidalia Onion
1 Red Bell Pepper
1 lb Thick Cut Bacon
1 lb Ground Beef
3 Cloves of Garlic
1/2 Tablespoon Cajun or Creole Seasoning
4 (15oz) Cans Pork & Beans in tomato sauce
1/2 Cup Dark Molasses
1/4 Cup Light Brown Sugar
1/4 Cup BBQ Sauce
2 Tablespoons of Mustard

Start out by heating large pan over a Medium heat.
Chop the onion and red bell pepper, then set aside.
Sear the bacon in the large pan to almost crispy, and then remove to a plate layered with paper towels. Be sure to leave the drippings in the pan.
Add the chopped vegetables to the pan, and sauté for 15 minutes.
While the vegetables are sautéing, chop the 3 cloves of garlic and the bacon.
After 15 minutes, add the chopped garlic, ground beef, and Cajun seasoning to the pan.
Sauté for another 15 minutes, drain into a strainer, then add back to pan.
Add in the bacon, pork & beans, molasses, brown sugar, BBQ sauce, and mustard. Mix Well.
Cover and Lower to a simmering heat. Let simmer for 30 Minutes, stirring occasionally.
At this time preheat your oven to 350 degrees.
After 30 minutes, turn your fire off, and pour the contents of the pan into a large baking dish.
Bake in the over for 50 minutes.
Remove from the oven and let cool for 5-10 minutes before serving.
Enjoy!
