Baking recipes with Satsumas

Somebody just gave me a big bag of satsumas and I doubt I will be able to consume them through traditional means.

Anybody got any good satsuma recipes? Seems like I've have satsuma pound cake or cookies before.

Juice them and make a Satsuma pie

5 egg yolks, beaten
1 (14 ounce) can sweetened condensed milk
1/2 cup Satsuma Juice (or more)
lemon or satsuma zest.

Mix above ingredients, bake in a pie crust(graham cracker usually) for 15 minutes at 375*.

That sounds pretty simple.

How much zest would you recommend?

Thai Pork with Satsuma Sauce. It uses the same recipe as a recipe with oranges, but obviously substitute with satsuma's.

Just four or five passes over the zester, just to give it a slight added flavor, but not enough to add texture.

Also take the egg whites and use them for a meringue topping and have a Satsuma Meringue pie.

drink a satsuma old fashioned while baking a satsuma buttermilk pie, then make some satsuma-cello

This months southern living had a great looking recipe for making a satsuma vodka. If you are interested I'll post it.
