Beef Tip Recipe

Beef tips seem like a crockpot layup to me. Tough cut of beef, simmered to tenderness in a brown gravy. It's been YEARS since I've had any and need to get it on my menu now that I have a ton of fresh green beans from the garden. Any favorites?

Do then sous vide. 24+ hours or more at 131F. Make some kind of gravy concoction separately to serve them in, even if you have to sacrifice a few beef tips to create a fonde. You get good gravy with really tender beef, but don't let the beef cook further in the gravy. This works fine with stew meat. It also works good if you want to cook the beef and add it to Asian style stir fried vegetables with a sauce.

My daughter recently made these for me when i visited her.
She added cut up mushrooms and used freshed pressed garlic.
Very good IMO.

Funny you post this as I’ve got some in the oven right now. The recipe I’m using (for the first time):
2 lbs stew meat
1 pack brown gravy mix
1 pack onion soup mix
1 can cream of mushroom
1 cup water.

Preheat oven to 300. Place cubed stew meat in a 9x13 casserole dish. In a mixing bowl combine and whisk gravy packet, onion packet, cream of mushroom, and water then pour mixture over meat. Cover dish with foil and cook for 3 hours. It seems pretty foolproof and smells delicious right now, but I’ll let you know how it turns out.

You can also do this in a crock pot cooking on low for 7-8 hours.

I’ve got the tips in the oven, greens (mustard and turnip) on the stove, black eyed peas on the stove, rice simmering, and cornbread in the other oven.

They turned out good. Easy to make too.
