Best banana bread recipe

I prefer low sugar but I for sure need one that is not so dry. Any tried and true recipes out there?

Coincidentally, saw Pillsbury started making take and bake banana nut bread tubes similar to their cookie dough. Tried it a couple months ago and its pretty good. I know its not homemade but thought it was worth mentioning.

On the second go, I added some pecan pieces and frozen blueberries, lowered the temp a bit and extended the bake time a few and it was damn good.

Should try.

My friend makes this one from the Tiger Bait cookbook and it's always moist. Stadium Rat posted it to me some years ago.



I don't know if you could cut the sugar and still get a good result, but I don't think it's overly sweet.

This is the one I use and have many people tell me they love the banana/nut bread I make. The following makes one loaf pan worth.

1/4 cup shortening----I use Crisco for this
3/4 cups white sugar
1 egg
2 cups all purpose flour
2 ripe bananas------I let them get to brown spot stage before using them
1/2 tsp. baking soda
1/4 cup sour cream
Chopped nuts to taste------I will use either pecans or walnuts

In one bowl put the shortening, egg, sugar and sour cream and beat well to blend it smoothly. Then add the bananas and beat that until smooth.

In a separate bowl add the flour, baking soda and chopped nuts and add the bowl of liquid ingredients to it and mix well until a consistent batter is formed.

Grease and flour your loaf pans and bake between 55-60 minutes in a 325 degree oven. Remove at 55 minutes and use a toothpick to make sure it is done. If any batter sticks to the toothpick, put it back in the oven for 5 minute increments and check till a toothpick comes out clean.

Remove the loaf from the loaf pan and let cool on a cooling rack.

Every time my MiL makes banana bread, I want to make bread pudding with the leftovers. Only problem is, there's never any leftovers.

Here is the wife's recipe. Make sure the bananas are almost black over-ripe.

1 ½ cups s.r. flour
½ cup dark brown sugar
1 t cinnamon
½ cup chopped nuts
1 stick butter (1/2 cup) butter, melted, cooled
2 eggs beaten
2 bananas mashed
1 small fruit cup of unsweetened applesauce
½ t vanilla

Combine flour, brown sugar, cinnamon. In another bowl combine butter, eggs, bananas, applesauce, vanilla. Stir wet and dry together. Stir in nuts. Pour into loaf pan. Bake at 325 degrees for 50 minutes.

Here's one modified from my grandmother's and my mother's recipes. You can cut the sugar down some if the bananas are ripe enough.

Ingredients:
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1/2 cup oats
3 teaspoons baking powder
1/2 cup sugar
4 tablespoons butter (melted)
2 to 3 bananas (ripe)
1/2 cup milk
1 egg
1 cup pecans or walnuts (chopped)
1/8 teaspoon cinnamon
1/8 teaspoon orange extract

Cooking Instructions:
Preheat oven to 350º. In a bowl, mash the bananas. Whip the egg next to the bananas, then stir together with sugar. Add flour, wheat flour, oats, baking powder, cinnamon, butter, milk, orange extract, and pecans. Mix gently.

Grease an 8” x 4” loaf pan. Pour mixture into loaf pan. Bake 50 to 60 minutes until middle is set. Remove from oven. Let cool for 5 minutes before removing from pan. Let cool an additional 5 minutes before cutting.

Serving Instructions:
Can be served warm, chilled, or at room temperature. Makes 8 to 12 servings.

update: I did a mash up of Gris Gris, Gumbo, and Meridian's recipes and it was yummy with only a half cup of sugar. But it also shows why I am a cook and not a baker. I can't for the life of me just follow a recipe

I used egg, sour cream, and applesauce and added a splash of milk when batter looked too thick
