Honestly Tony's Garlic Butter is so good I've never bothered with making my own.

All the premade injection stuff has sugar in it and it burns up your grease. If you’re frying more than one, just season them heavily the day before with a dry rub of your choosing. I really like Hardcore Carnivores Fried Turkey Rub.

Same here, I smoke a turkey every year and I've found it to be the best. I did an experiment with some seasoned up bacon grease one year that did well too.

....you know, you could collect bacon drippings for a while in large mason jar.

Melt it in the jar in warm water. Add two a pan. Add onions garlic and celery to the fat. Any seasonings you might want as well. Confit that until veg is lightly caramelized.

Strain the oil off onto a jar. And you now have a flavored injector mix that shouldn't contaminate your oil.

I mix Zatarain’s creole butter and Cajun power garlic sauce 50:50 and deep fry in lard. The bird disappears quickly, don’t even have enough for a sandwich the next day.

Combine your favorite bottled creole butter injection with Dale’s Low Sodium Marinade. 3 parts creole butter to 1 part Dale’s.
