Can you slow-cook or and have it come out crispy and not fatty?

You can cook it like any other brisket.

Well, if you smoke it, it becomes Pastrami and that's some damn good stuff too.

Is it already corned (cured) and you are looking for an additional way to cook it even more?

Slice thin with a filet knife and pan fry like bacon, or smoke it with pastrami seasoning as already mentioned (black pepper, toasted coriander).

Maybe sous vide and finish with a sear.

Ok, she did it in the oven IIRC.

I'm trying to emulate how she did it...

Do you coat it with something?

Mustard or ?

Hers was crispy and lean.

I cook mine (I get a point and a flat) in the Instant Pot add a bottle of dark beer, take it out, add the little seasoning packets now, and crisp it up in a 425* oven for about 10 minutes I like the fat crispy. SO good

Slow cooking isn’t going to make it come out crispy. You can slow cook it to render the fat.

As mentioned, I’m assuming your corned beef is brisket, you can cook it any way brisket is cooked. And as mentioned, if you smoke it, it’s pastrami.

I have done sous vide in the past and sear in a large cast iron skillet. It comes out great that way.

Do you mean brisket? A brisket is turned into corned beef, but once corned it’s usually not made crispy. I’m sure you can do anything you want? But I’m confused on what cut of meat you have that’s corned and also what your end goal is?

We usually just reheat the corned beef and eat it with sides, make it into something like hash, or slice thin for things like sandwiches.
