Black-Eye Pea Casserole

Even if you don't like Black-eye Peas, you will prolly like this!!!!!

1 Lb Jimmy Dean Sausage
1 Cup Diced Ham
1/4 Cup Bell Pepper
1/4 Cup Green Onion
2 Can Trappey's Peas w/ Jalapeno (DO NOT DRAIN)
1/2 Tbs Garlic Powder
2 Cups Cooked Rice
1/2 Cup Bread Crumbs
1 Stick Real Butter
Season to taste

Cook Rice.
Brown Sausage.
Add Green Onion, Bell Pepper, Ham, Garlic Powder.
Cook 10 minutes.
Add Peas and season to taste.
Mix with Rice in 2 Quart Casserole Dish.
Cover with Bread Crumbs and dot with Butter.
Bake at 350 for 20 minutes.

Easy and good!!!!!!!

I came in here just to see if there was something easy to make for supper tonight. This sounds good, we also love Trappey’s peas, I’ll be cooking this tonight

Sure why not, if you want Black-eye Pea Jambalaya

Hell, I put some leftover Boudin in Jambalaya this weekend. Sometimes, a quick easy casserole just fits the ticket.

Been using your recipe for years my only tweak is I put crumbled up garlic pepper dried onions on top of mine instead of bread crumbs....

I’m going to make that this weekend.

And I’ll make this recipe of yours again in about 3 weeks.

I had about a quart frozen in my freezer that I thawed out and ate like in mid August. Was as good then.

Those are always a good call for a casserole topper. Whenever we do the old green bean casserole, I buy extra cans because I end up snacking on them while we're cooking. I like to toss them in the oven on a low broil for about 5-7 minutes and eat them hot.

Also good on a hashbrown casserole. We usually go with corn flakes and butter, or crushed Ritz and butter, but one time I was out of both and had some onions on hand and it was great. Also good for those picky eaters that don't like diced onions in a casserole, you can top half of it with these onions and the other half with corn flakes or Ritz.

Made this last night. My sense of taste is still a bit off, but my wife and kids liked it. They all added their own little touches to it when it was done. One added cheese, one added Ranch, etc.

Will definitely make again.
