Black eyed peas recipes for 1-1-22

I’m putting smoked sausage and tasso in my peas along with a little roux. What y’all doing?

Pickled pork, a smoked turkey leg, seasoning blend, 2 boxes of beef broth, and 2 tablespoons of Beef Better than Bouillon in a crock pot all day on high. The pork and BTB is salty so add more salt at the end if you think it needs it. I also add some cayenne while it cooks.

Some kind of smoked pork- maybe tasso, and chicken broth. Cook on low until the broth gets nice and creamy.
Mayo slaw & oil/vinegar slaw, and a pork tenderloin that might be stuffed with boudin, but it depends on how I'm feeling that morning.

As far as the method, I cook my black eyed peas almost exactly like my red beans. Trinity, chicken stock, ham hocks and Tasso. Cook em til I’m happy with em.

Black eye peas from dry. Beef stock, bay leaf (just one), Worcestershire sauce, can of Rotel, diced onion saute, Maybe a dash of bitters. Maybe some Tony's depending on taste at the time.

You’re gonna think im smoking crack, but mix your peas with mayo in your plate with tonys. I wont eat black eyed peas without it now

Mine is a very basic recipe.
Put 1 lb. peas in some hot water in a bowl to make sure they are clean before going into the pot.
Dice:
1 onion
2 ribs celery
1 bell pepper
4 cloves garlic minced
2 bay leaves
I used some of the ham left over from Christmas, along with the ham bone.
Put water in the pot, add the vegetables, ham and ham bone and let this come to a boil.
Drain the peas and add to the pot and adjust the water in the pot to cover the peas about 1 inch.
Toss in some Slap Ya Mama, a bit of Worcestershire sauce and let it come to a boil. Then turn down to a simmer and cook until the peas are tender. Stir occasionally to keep from sticking.
The peas cook much quicker than red beans and should be done in 2 hours or so.

I saute onion, bell pepper and celery in some oil until soft, throw in a bag of peas that I soaked overnight with a ham hock and chicken stock and cook it for a few hours. I salt and pepper the veggies as I saute them and season the peas as they cook with tonys. Mash a few of the beans with a spoon after they soften to thicken up the liquid. Add a pound of sliced andouille toward the end of the cook and remove any meat from the ham bone and add to the peas. Serve over rice and enjoy.
