Boiled a hamper today (5 doz).
Fill 100qt pot to 5th hole on basket.
(1) 16oz bottle of Louisiana Liquid Crab Boil
(1) 4lb bag of Louisiana powder
8 lemons
6 onions
1 bunch celery
1 bottle Louisiana Hot Sauce
1 jar Garlic Powder (not the granulated)
Potatoes
Mushrooms
Sausage
Corn
Bring water to boil. Add:
16oz liquid crab boil
bottle of hot sauce
about 3/4 of the powder dump
jar of garlic powder
When water comes back to boil, I drop the onions, 4 lemons, sausage, corn, potatoes, celery and mushrooms in and boil for 10 minutes. Dump them in an ice chest.
Dump the remaining Louisiana powder and the 4 remaining lemons. Bring to a boil. Drop the basket of crabs in and boil for 12 minutes. In the meantime I dump everything from the ice chest (sausage, corn, potatoes, mushrooms, onions, etc) into a boil bag. After 12 minutes shut the fire off.
Drop the boil bag on top of the crabs and carefully press them down below the water line. Soak ~20 minutes. Done deal.

Crabs are tough, depends on how fat/skinny they are.

What Chef said is correct. Full crabs barely take in seasoning.
I used to be a chackbay seasoning but this past crawfish season I switched to the tub of Cajunland. It’s great. Combined with a bottle of Zat liquid, it’s perfect!
