Can you inject a bone in turkey breast the night before?

I have a 7 pound turkey breast that I will be frying in the morning. I was planning on injecting it this evening and letting it hang out overnight in fridge before I fry it in the morning. Should I wait to inject it until the morning? Any downside to doing it the night before?

There is no downside to injecting it the night before. I believed it actually helps because excess liquid can leave the meat and that’s liquid that won’t be escaping in your hot oil. The meat is only going to hold a certain amount of liquid regardless. Any extra liquid is just going to escape during cooking.

For all the years we have fried turkeys we always injected the night before. Whole turkeys or breasts.
